BAJRI NA VADA







Bajri Na Vada is a wonderful snack.. Quick, easy and satisfying. It keeps good for a week if we only use yogurt to knead the dough and it gets better with each passing day. This is one of the few snacks enjoyed best cold. Ideal for carrying with you on a trip or just as a snack at home. Another wonderful thing about this snack is that its made with the minimum of ingredients available at home. 


Ingredients:


Bajri/Millet Flour, 1.5 cups
Yogurt, 1.5 - 2 tbsp as needed
Salt to taste
Turmeric Powder, 1 tsp
Green Chili, 2 tbsp finely chopped
Garlic, 2 tbsp finely chopped
Sesame Seeds, 1 tbsp
Oil to fry and smear


Procedure:




1. Take Bajri/Millet flour in a bowl


2. Add in the salt and turmeric powder

3. Add in the green chilies and garlic

4. Throw in the sesame seeds. Mix well.

5. Knead into a soft dough using the yogurt.

6. Smear with oil and let it rest for 20 minutes.

7. After 20 minutes, knead the dough again and form small lemon sized balls out of the dough.

8. Roll the dough between your palms and then using your fingers pat into small round thick puris. The puris have to be quick thick as these are vadas.

9. Simultaneously, heat oil in a wok on medium heat.

10. Fry the vadas a few at a time on low medium heat until the vadas are brown on both sides. 

11. Remove onto a kitchen towel to drain out the excess oil.

12. Let them cool down to room temperature before storing in an airtight container. Enjoy with tea or coffee. These vadas typically stay good for a week.
