Karela/ bitter gourd, the name itself brings frowns to most faces. But this is also among the most nutritious vegetables. We all know how karela helps with diabetes. But that's not it. It also acts as a blood purifier, aids blood loss, improves immunity and fights acne and skin infections yielding a healthy glowing skin.
There are various ways to make karela, you can stuff it, fry it or make its juice. I prefer this method. The onions render a sweet taste to this vegetable and adding some jaggery powder in the end enhances the overall flavor of the dish.

Ingredients:
Karela/Bitter gourd, 250 gms washed, peeled, deseeded
Reserve the bitter gourd peels
Mustard Oil, 2 tbsp
Cumin Seeds, 1 tsp
Asafoetida, a pinch
Green Chilies, 2 finely chopped
Onions, 1 finely chopped
Fresh Coriander Leaves, 1/2 cup
Turmeric Powder, 1 tsp
Salt to taste
Cumin Coriander Powder, 1 tbsp
Red Chili Powder, 1 tsp
Jaggery Powder, 1 tbsp
Procedure:
1. Clean the bitter gourd and cut them into roundels.
2. Smoke mustard oil in a thick bottomed wok.
3. Add the cumin seeds and the asafoetida.
4. Add the green chilies and the bitter gourd peels.
5. Next add the onions and saute till pink.
6. Add the turmeric powder.
7. Next the cut karela/bitter gourd.
8. Now add the coriander leaves and mix.
9. Add the coriander cumin and red chili powder and salt and mix well.
10. Finally add the jaggery powder and mix again.
11. Serve hot with Chapatis or Rice!
