Dal Ka Halwa is one of my favorite halwas. Its aromatic with the use of cardamom powder and saffron and has a melt in the mouth texture. The rich golden hue of the halwa makes it look as beautiful as it is delicious!

Ingredients:
Split Yellow Gram, 1 cup
Milk, 1 cup
Ghee, 1/2 cup
Saffron, a few strands
Cardamom Powder, 1/2 tsp
Sugar, 1.5 cups
Slivered almonds for garnish
Procedure:
1. Wash and soak the Moong Dal in sufficient water for atleast 3 hours.
2. Drain well and blend into a coarse paste without using any water.
3. It takes several hours to saute the dal, to remove the excess water. To save time we strain the dal using cheesecloth, separating the water from the dal paste.
4. This strained water can be used to knead chapati dough or just temper and drink.
5. Spread the paste on to a plate so as to avoid getting lumps while sauteing the dal.
6. Heat ghee in a thick bottomed deep pan and add the prepared paste.
7. Cook on medium heat for 20-25 minutes stirring continuously.
8. In a separate bowl, soak the saffron strands a a tablespoon of milk or water and keep aside.
9. Microwave the milk for a couple of minutes and add to the dal pan. Mix well and cook for another 7-8 minutes stirring continuously.
10. Next add the sugar. Mix well and cook for another 3 minutes while continuously.
11. Time to add the saffron mixture, cardamom powder to make our halwa more aromatic and cook another minute. Keep stirring.
12. Enjoy hot, garnished with slivered almonds.
