FALAFEL




Falafel is a favorite at my place. It's great for parties too. I usually prepare the batter ahead of time and then just add some soda and fry them right before the party. Serve with some fresh juicy tomato slices, onions, some fresh parsley, lettuce, pita pockets and some fresh homemade hummus on the side.

Ingredients:


Chickpeas, 1 cup soaked overnight
Fresh Coriander Leaves, 1/4 cup
Fresh Parsley Leaves, 1/2 cup
Onion, 1 medium roughly chopped
Garlic Pods, 4
Cumin Seeds, 3/4 tbsp
Salt to taste
Soda Bi-Carb, 1/2 tsp
Oil for deep frying

Procedure:


1. Wash & soak the chickpeas overnight.


2. Blend together chickpeas, coriander, parsley, salt, cumin seeds, onions, salt and garlic pods. 



3. Blend into a coarse batter. If you are making this for a party, you can prepare and pop this batter in the fridge ahead of time. Fry just before your guests arrive.


4. Add soda bi-carb just before you're ready to fry. Drop small lemon sized balls into medium hot oil and fry until brown and crisp on all sides. 


5. Serve hot!


6. For my party I served the falafel with some pick pockets, tomato, onions, lettuce, parsley and hummus on the side.
