STUFFED CUCUMBER


I love cucumber.. and the wonderful cooling effect it has. Also, its very handy to have in the fridge, you can use it in a sandwich, salad, sabzi or just eat the way it is. When we were young my mother would cut them vertically into four pieces, sprinkle chat masala and squeeze a lemon and feed this to us on hot summer afternoons.

This recipe works great for as an afternoon snack or a great appetizer for adhoc guests. 





Ingredients:

Cucumbers, 2
Cheese, I used Laughing Cow Spicy Cheese
Red Bell Pepper, 1 Chopped
Coriander, 1 tablespoons
Green Chilies, 1 finely chopped
Avocado, just half, scooped and mashed
Black Pepper, crushed
Salt to taste
Lemon, half

Procedure:

1. Clean the cucumbers and scoop out the flesh, if you don't have a scooper you can also use a spoon



2. In a bowl add the mashed avocado and also add the scooped cucumber flesh. Finely chop the red bell peppers, green chili, coriander and add. Add salt, black pepper, lemon juice and mix it all together. Stuff this into the cucumber cavity and top it up with cheese. You can skip the cheese to make it healthier.
