This is a wonderful way of including bell peppers into your diet. And instead of using the traditional green peppers, try them with red bell peppers. They look beautiful and taste delicious. Have this by itself with chapatis or parathas or team it up with dal fry to make a complete meal!
INGREDIENTS:
Red Bell Peppers, 2
Potatoes, medium 2 boiled and peeled
Green Chilly, 1 finely chopped
Coriander fresh, 1 tablespoon finely chopped
Asafoetida, a pinch
Cumin seeds, 1 teaspoon
Salt to taste
Red Chili Powder, 1 tablespoon
Coriander-cumin Powder, 1 tablespoon
PROCEDURE:
1. Cut the red peppers in halve and scoop out the seeds
2. Put the boiled and peeled potatoes in a bowl and mash them well
3. Add green chilies
4. Add coriander leaves
5. Add the red chili powder, coriander-cumin powder, salt and mix well
6. Stuff this mixture into the bell peppers and keep them aside.
7. Heat a pan on medium heat. Once warm add a tablespoon of oil. Once the oil is hot, add the cumin seeds and the asafoetida.
8. Carefully place the bell peppers on to the pan, facing the stuffed side down
9. Once done on one side, this should take about 4-5 minutes on medium heat, flip them to the other side
10. Fry them on the other side for about 4 minutes as well
11. Serve hot with chapatis or parathas!
