PANEER BHURJI/ SCRAMBLED COTTAGE CHEESE



Paneer is the Chicken of a vegetarian household. North Indian families, like mine, always order Paneer when dining out. Usually accompanied by Dal Makhni. This is a quick, healthy and easy Paneer Bhurji recipe. Perfect for your Friday night menu. 

What I also love about it is that it makes for a great sandwich. Use any leftovers to make a Grilled Paneer Sandwich for breakfast the next morning, to enjoy with your tea or coffee.

Ingredients:


Paneer, grated 3 cups
Oil, 1 tbsp
Ginger, finely chopped 1 tsp
Garlic, finely chopped 1 tsp
Green Chilies, finely chopped 2
Onions, 1 finely chopped
Tomatoes, 1 finely chopped
Green Bell Pepper, 1/2 finely chopped
Red Bell Pepper, 1/2 finely chopped
Salt to taste
Turmeric Powder, 1 tsp
Coriander Cumin Powder, 1 tbsp
Red Chili Powder, 1 tsp

Procedure:


1. Heat oil in a thick bottomed pan. 


2. Add chopped ginger, garlic and green chilies. Saute till brown.


3. Next throw in the chopped onions. Saute till brown. 


4. And next the finely chopped tomatoes. Cook till they turn a little soft. 


5. Finally the green and red bell peppers. We want to retain the crunch of the peppers, which is why we add them towards the end. 


6. Time for the dry spices. Add in the coriander cumin, red chili, turmeric powder and salt. Mix well. 


7. Now the grated paneer, make sure you lower the heat before adding the paneer. We don't want it getting dry and crusty. Mix to blend well. 


8. Cook for 5 minutes covered. 


 9. Serve hot with Parathas or Rice.
