This is one of the quickest appetizers I know and easy enough that even kids can make it. I was introduced to the recipe by one of my Bhabhis. I used to make it quite often as a kid and even today it's one of our to go recipes when we are a bit peckish yet not in the mood for elaborate cooking.
Try it yourself and let me know how you go.
Ingredients:
Bread Slices, 3
Egg White, 1 (Optional)
Garlic, 1 tbsp Minced
Ginger, 1 tbsp Minced
Green Chilies, 2 Minced
Cheese, 3 Cubes Grated
Black Pepper, 1 tsp Freshly Cracked
Green Bell Pepper, 1/4 cup Finely Chopped
Fresh Coriander Leaves, 1 tbsp Finely Chopped
Procedure:
1. Cut the bread slices into a triangle. I have taken white bread, but you can use whatever you prefer. I keep the crusts on but you can discard them if you like. They add extra crunch to the toasts for me.
2. Place the cut slices onto a baking tray and bake at 360 F in a preheated over for about 15 minutes or until the top of the bread turns slight golden.
3. Simultaneously, in a bowl take the ginger, garlic and green chili paste. You can also add some egg white at this point. This is entirely optional. It just adds a beautiful golden brown color to the dish but you will still get the same wonderful taste without it.
4. Add the chopped green peppers, coriander leaves and cheese and mix to combine well.
5. Finally add the freshly cracked pepper and give it a final stir. Our spread is ready and you can make this ahead of time and pop in the fridge until you're ready to bake.
6. Spread the prepared mixture on to the non toasted side of the bread slices. Be generous with the spread.
7. Bake at 360 F for 15-18 minutes and broil for the last 3 minutes to get that golden brown color.
8. Remove from the oven and plate it while its still hot.
9. Serve hot with ketchup.
