SPINACH & CABBAGE PARATHA
This is as healthy as they come. With the goodness of greens and the crunchiness of cabbage these parathas are great for breakfast, lunch or dinner.
Ingredients:
Fresh Spinach, chopped 1 cup
Cabbage grated, 1/2 cup
Whole wheat flour 1 1/2 cup
Green chillies, finely chopped 2-3
Fresh coriander leaves, 2 table spoons
Sesame seeds 1 table spoons
Turmeric powder, 1 tea spoons
Salt to taste
Red chilli powder, 1 table spoons (or adjust as required)
Corinder-cumin powder, 1 tablespoon
Oil to fry
Procedure:
1. Clean and chop spinach, cabbage, green chillies, fresh coriander leaves, salt, turmeric powder, red chilli powder, coriander-cumin powder, sesame seeds, 1 table spoon oil and add this to the flour.
2. Knead the dough using water as required to make a stiff dough
3. Let the dough rest for 20 minutes. After 20 minutes, divide the dough into 8 round balls and keep them well covered to prevent dryness.
4. Heat a girdle on medium heat and simultaneously roll out the paratha using dry flour as required. Once the girdle is sufficiently hot, place the paratha and once bubbles start to appear flip it to the other side and smear with oil and fry till the desired crispiness is achieved.
5. Serve the parathas hot with yogurt and pickle.
