This is one dish I can always rely on when one of the Parikh family members is visiting us. Its a favorite with everyone in the family. Clubbed together with Gujarati Dal, Rice, Roti and Chas, it makes for their ultimate comfort meal.
Its another one of those dishes that you wont find on the menu at a Gujarati Restaurant or Thali place. Traditionally the potatoes are deep fried but I try to attain similar crispiness by sauteing them, in an attempt to make them a tad bit healthier.
A few times I have also made this vegetable with the leftover Burger King chips. Thin crisp chips coated with spices and sesame seeds taste divine with gujarati dal!
Ingredients:
Potatoes, 2 peeled and cut into thin chips
Oil, 1 tbsp
Mustard Seeds, 1 tsp
Asafoetida a pinch
Curry Leaves, 1 sprig
Green Chilies, 2 slit
Turmeric Powder, 1 tsp
Salt to taste
Coriander Cumin Powder, 1 tsp
Red Chili Powder, 1 tsp
Sesame Seeds, 1 tsp
Procedure:
1. Heat oil in a wok
2. Once hot, add in the mustard seeds and let them splutter.
3. Next add in the curry leaves, green chilies and asafoetida. Give it a stir.
4. Now throw in the potato chips and mix.
5. Add salt and turmeric powder and mix again. We will saute till the potatoes are crisp and golden.
6. Once they are crisp add the coriander cumin and red chili powder. Mix and top with sesame seeds.
7. Serve hot by itself or with Gujarati Dal and Chaas!
