YAM KEBAB


I made this for my New Year party (2016) and it was a big hit! This is a great way to incorporate Yam/Suran into your diet. Yam/Suran combined with chana dal and mint makes these kebabs irresistible. Try them. These crispy delicious treats will be gone in a jiffy.

I had some Yam/Suran lying in the fridge and was looking up interesting recipes to use that up. That is when I cam across this yummy recipe by Tarla Dalal. 


                      

Ingredients:


Chana Dal, 1.5 cups
Yam/Suran, 1 cup chopped
Oil, 1 tbsp
Onions, 1.5 cups finely chopped
Ginger, grated 1/2 tsp
Garlic, 1/2 tsp crushed
Green Chilies, 2 small finely chopped
Fresh Mint Leaves, 1/4 cup chopped
Chat Masala, 1 tbsp
Garam Masala, 1/4 tsp
Salt to taste

Procedure: 

1. Dry roast the split bengal gram. Roast on medium low heat till the dal is evenly and well roasted.


2. Set aside to cool and then grind to a fine powder. 


3. Heat oil in a pan.


4. Add in and saute the onions till translucent. 


5. Next flavor with some ginger, garlic and green chilies. 


6. Time to add in the chopped Yam/Suran. 


7. Add 1/2 cup water to help soften the yam. Simmer for 5 minutes covered.


8. Set aside to cool.  


9. Mash using a potato masher and mash well.


10. Spice it up with some garam masala, chat masala and salt. 


11. Throw in the fresh mint leaves and add the powdered chana powder. 


12. Mix everything to combine well. 


13. Divide the dough into 12 balls. And make round kebabs. 


14. Heat oil on medium heat to deep fry the kebabs. 


15. Slip in the kebabs one by one and fry a few kebabs at a time. 


16. Fry till crisp brown on both sides. 


17. Serve hot with some Mint chutney on the side!
